Bacon, Egg & Cheese Quesadillas Recipe (1)

Let me bring you back to my Sunday morning this past weekend. The picture goes something like this. I’m in the kitchen (surprise!) and the hubby is lounging on the couch. As I’m making bacon egg muffins he asks with a sheepish grin, “Do you think you could make me a breakfast quesadillas also?” Sure, anything else I can do for you sir?

Quesadillas – Hubby is obsessed! We received a quesadilla maker for our wedding and he has not stopped making them since. I love it because when I have no other ideas for food I quick grab that and know he’s going to be happy with whatever I put in there. It’s basically a Sunday ritual to make quesadillas with whatever ingredient we have sitting around. I really want to try Artichoke and Spinach Dip quesadillas like you find at a restaurant next!
Bacon, Egg & Cheese Quesadillas Recipe (2)Ah it’s all good. I love him dearly and I’ve only had a few days a week to treat him to home cooked meals so I better do it when I can. He’ll be back after this week and things might change a little!

This isn’t even hard enough to justify a recipe and sometime I think are people going to thing I’m pointing out the obvious? But these were so good and in case you wanted a recipe I thought I’d post one. They are super simple and quite tasty. It’s a different twist on the plain old bacon and eggs. We have a handy quesadilla maker but you can make these in a frying pan also so don’t let that stop you.

This looks delicious and what a great way to use up extra tortillos.
What is the easiest way to flip the tortillos once the egg mixture is added? I usually end up with egg outside of the tortillo’s and in the skillet.
    Thank

FAQs

What cheese melts the best for quesadillas? ›

Sometimes the best cheese for quesadillas is whatever you have in the fridge when the craving strikes. Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

How do you make quesadillas stick together? ›

You need to have cheese on both ends of the tortilla so it glues the ingredients together. Just like a stuffed grilled cheese! Not to mention, it's quesadilla math. The quesadilla I'm sharing below uses my turkey taco meat and I add beans, salsa, my quick pico and cheddar and monterey jack.

How do you make quesadillas not soggy? ›

Ironically, the key to a crispy quesadilla is less fat in the pan, not more. Too much fat will make your quesadilla soggy instead of crispy. Use just enough to coat the bottom of your skillet — about 1/2 teaspoon of butter or oil. Warm it in the skillet over medium to medium-high heat.

What cheese do Mexican restaurants use in quesadillas? ›

Traditional Mexican cheeses like Oaxaca cheese or Chihuahua cheese are commonly used in quesadillas because they melt easily and have a mild, slightly salty flavor. Other cheese options include Monterey Jack, Colby Jack, and mozzarella.

What to put inside quesadillas? ›

What toppings go in a quesadilla?
  1. Southwestern: Fill your quesadilla with black beans, chopped onions, peppers, tomatoes, corn, cilantro and pepper jack cheese. ...
  2. Mediterranean: Load your quesadilla up with a blend of chopped spinach, red onions, Kalamata olives, feta cheese crumbles and mozzarella cheese.

What is the hack for quesadillas? ›

The idea is simple: Instead of layering all your ingredients in one big pile atop a tortilla, put each one in its own quadrant. Then fold the four corners on top of each other to create one perfectly mess-free (but melty, crisp, and golden brown) triangular quesadilla in practically zero time.

Do you flip a quesadilla? ›

Sprinkle a little more than 1/4 cup cheese on top of tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich; cover with a lid. Cook for 1 minute, then flip the quesadilla. Cook until cheese has melted on the inside; transfer quesadilla to a plate.

Should I fry quesadillas in oil or butter? ›

The third rule is to cook your quesadillas in oil instead of butter. I opt for butter over oil whenever possible, but this is one case where oil is better: Butter contains water, which means that your quesadillas will turn out damp and floppy.

Do you cook quesadillas on high or low heat? ›

Tortillas burn easily, so you want to fry your quesadillas on medium heat. It takes about a minute to a minute and a half to get each side crispy and golden--and your cheese will be perfectly melted, too.

How do you seal the edges of quesadillas? ›

Once it's hot, lay in a tortilla and sprinkle with two tablespoons of the cheese mix, making sure you leave a decent border all around the edge. When the cheese begins to melt, add a few slices of chilli and a pinch of epazote (or oregano), and fold over the tortilla, pressing it down to help seal it.

Are quesadillas better with corn or flour tortillas? ›

Corn tortillas go well with Mexican dishes like tacos, enchiladas, and tamales. They are also perfect for use in tostadas, sopes, and quesadillas. Flour tortillas are often used in burritos, fajitas, and chimichangas. They are also great for making quesadillas, sweet dishes like dessert tacos, and breakfast burritos.

Which cheese is the best melting cheese? ›

What is the best melting cheese? Cheeses with more moisture and lower melting points - cheddar is one of the most popular choices, but Swiss and Gruyère are also terrific options. Which melts better, mild or sharp cheddar? Mild cheddar melts more smoothly than sharper (more aged) cheddar.

What kind of white cheese is used in quesadillas? ›

The answers are really all over the place. If you are eating in a Mexican restaurant in the US, it is probably Monterey Jack cheese. The cheeses used in Mexico for quesadillas could be Jack, Oaxaca, Chihuahua, Asadero, or Mennonita.

What is the best cheese to melt on tortilla chips? ›

The genius of melting cheese over tortilla chips can never be overlooked. Cheddar cheese is a popular choice these days, though Monterey Jack and Mozzarella work just as well. Nacho cheese, or cheese sauce, is another delightful interpretation of this key ingredient.
